3 Great Kenyan Recipes to Make with Potatoes

Everyone loves potatoes ….
Okay, almost everyone. Have you ever looked at those Sonford and Sons joints
and how full they usually are? There is evidence that people are in love with
potatoes. 

If you are a potato fan , here are few recipes you could use at the
comfort of your home:-

1.Potato samosas

Ingredients:

  • Flour
  • Vegetable oil
  • Salt
  • Water
  • Potatoes
  • 1 onion


Directions

  1. Peel the potatoes. Wash and
    cut them into pieces. Boil the potatoes in salty water.
  2. Heat vegetable oil in a
    frying pan
  3. Fry the onion till it
    turns golden brown, add the potatoes and cook for three minutes
  4. Allow to cool
  5. Mix the flour, salt and
    water to form dough and let it set for 20 minutes
  6. Divide the dough into
    balls them roll out the balls till they are thin. Divide the rolled out dough
    into two and make a cone with each.
  7. Fill the cone with potato filling then seal completely.
  8. Deep fry your samosas till
    they are golden brown.
  9. Drain off excess oil
  10. Serve

2. Mashed potatoes

Ingredients

  • Potatoes
  • Milk (optional)
  • Margarine or butter
  • Salt
  • Water

Instructions

  1. Peel the potatoes
  2. Boil the potatoes in salty water until tender
  3. In another pot, heat milk and margarine together, until the margarine
    dissolves.
  4. Put in your potatoes and allow to simmer for 5 minutes
  5. Reduce the heat and start mashing the potatoes.
  6. Add salt to your desired taste
  7. Serve

3. Fries

Ingredients

  • Potatoes
  • Salt

Method:

  1. Peel your potatoes and
    slice them into long rectangular shapes
  2. Preheat the frying pan
    and fry the fries
  3. Remove from heat, sprinkle salt and let
    the extra oil drain
  4. Serve and enjoy
